Spanish Omelette (Tortilla de Patata)

Ingredients 3 medium-sized potatoes 1 onion 5 eggs½ cup olive oil salt Method Peel and slice the potatoes and onions.  Make sure the potatoes are dry. Heat the oil in a non-stick 20 cm frying pan. When it’s smoking hot, add the potatoes and onions and stir around to cover them with the oil. Turn the heat down to low and gently cook the potatoes and onions until tender.  Shake the pan now and then and turn over when about half done.  They shouldn’t brown.
